Broccoli Chicken Casserole

I need more time to sleep! I wish the night is just a little bit longer, so I can sleep longer.. How much sleep do you think we need? According to National Sleep Foundation, (gosh, I just found out that someone is dedicating their time to such a thing, not that I consider sleep is not important, but, wow..)  sleep needs vary across ages and impacted by lifestyle and health. Basically the older we get, the less time we need to sleep, but we need at least 7 hours of sleep. I myself would be happy enough if I can get at least 8 hours of sleep, better if I can get 9 hours of sleep. The problem is, since I spend the day working, I spend the night reading, or playing. The mistake I repeatedly do, again and again is, start reading a book when I'm getting ready for sleep, and being a bookworm that I am, I just can't put down the book long enough to get some sleep! I know, I know this is my own fault, but even when I'm reminding myself not to do it again, I keep repeating my mistake again and again. *sigh* If only the night is longer..

Well, one of the best way to get some decent sleep, is to eat nice food. I don't know if it's the same for everyone, but for me good food makes me sleepy, especially comfort food like this amazingly delicious Broccoli Chicken Casserole! Yum~

Here is how you make it:

Broccoli Chicken Casserole

(Found the recipe from allthecooks application and modify it to my own style)

Ingredients:
300 grams boccoli, chopped
3 large potatoes, peeled or mashed potatoes -- original recipes use 3 cups cooked noodles
1 large chicken, chopped -- original recipes use 2 1/2 cups cooked chicken breast without skin
1/2 cup onions, chopped
1/2 cup skim milk, room temperature
1 cup shredded cheddar cheese -- original recipe use 1/2 cup grated fat-free Swiss cheese
1 tsp basil (I don't use this)
2 tsp salt
1/4 tsp black pepper
2 cups cream of chicken soup -- original recipes use 323 grams cream of mushroom soup

Direction:
1. Preheat oven to 176°C or 350°F.
2. Boil chopped chicken and the bones (I also use the skin, but you can omit this is you prefer) in water, boil it until the water almost gone and the meat cooked thoroughly. Slices the chicken as you like, set aside.
3. If you prepare a pre-cooked mashed potatoes, cook the mashed potatoes as directed. If you use raw potatoes, chop the potatoes, boil it in water, add a pinch of salt. Cook until the potatoes tender, mash everything, set aside.
4. Prepare the casserole dish with a cooking spray, if you don't have it, cover the bottom of the casserole dish with margarine, set aside.
5. In a mixing bowl, combine mashed potatoes, sliced boiled chicken, onions and broccoli.
6. Add the cream soup, milk, shredded cheese, salt, pepper and chicken broth (from boiling the chicken) into the mixing bowl, mix well.
7. Pour entire mixture into the prepared casserole dish, you can sprinkle shredded cheese on top of the mixture.
8. Bake it for about 40 minutes.
