Have I told you before that work can be really tedious?
To distract me from work, I started to try and cook something delicious. Even though I used to live apart with my parent for more than 8 years, I don't cook much, not because I'm bad at it, I just can't muster the will to cook. I do like cooking, what I don't like is cleaning the mess! You know student life, all play and little to no work. I'm guilty of it. So when I'm a student, I rather spend my time with friends, reading, or strolling somewhere. I do cook once in a while, and sometimes I also invite my friend to try my cooking. But it's not very often, only once in a blue moon..
Anyway, since I started working, I often found myself bored, because I don't have as much time to play as when I'm still a student. So when I'm bored, I'm searching application in my smartphone. And for you who love to cook, you may find All The Cooks and All Recipes to be your best friend. They are for me. Most of the recipe is easy to make, and it's delicious too! Just make sure you read the comment first before trying some of the recipe.
The first time I try a recipe from them is when one of my friend (which I know from work) give me a movie called Rise of the Guardians. Sometimes we chat about various things and we found out that we have a lot in common, particularly our taste in movie. I told her that I think Disney's Frozen is one of the best movie Disney ever created, and she agree with me. And then she asked me if I ever watch Rise of the Guardian, she said that movie is one of her favorite. The next time she came to visit me, she give me the dvd of that move. I'm so touched! And I absolutely love that movie.
And so I'm wondering what should I give to her to show my thanks. And I read this delicious-looking peanut butter candy recipe. It looks easy to make, so after work I make the candy for her and the following day I ask her to come to my workplace and give her the candy. She loves it and couldn't believe I spend my time making candy for her. And she ask if she can come to my home to cook with me next time. And so I found my cooking partner!
Anyway, the recipe I want to share with you today is not the peanut butter candy recipe, but a chocolate mascarpone brownies recipe. I found this recipe online, but I forgot where. Here's the recipe:
Chocolate Mascarpone Brownies
(This recipe is modified by me)
Yields: 13 cup (7.5x7.5x3cm)
Preparation time: 30 minutes
Cooking time: 50 minutes
Ingredients:
For Brownies:
1 cup Unsalted Butter
100 gr Dark Cooking Chocolate -- original recipe use 84 gr milk cooking chocolate
1 cup Granulated Sugar
1/4 cup Mascarpone Cheese -- original recipe use 1/2 cup mascarpone cheese
1/4 cup Cream Cheese -- original recipe don't use this
2 tbsp Maple Syrup -- original recipe use 1 tsp vanilla extract
2 large Eggs (room temp) -- original recipe use 3 large eggs
1/2 cup Cocoa Powder
1/2 cup All Purpose Flour
1/2 tsp Salt
For Ganache:
168 gr Dark Cooking Chocolate -- original recipe use milk cooking chocolate
6 tbsp Whipping Cream
3 tbsp Unsalted Butter
Direction:
1. Preheat oven to 162°C or 325°F .
Brownies:
2. In a double boiler melt butter, stir in chocolate. After everything melt, add sugar, stir until it looks shiny.
3. Add mascarpone cheese, cream cheesse, maple syrup and eggs. Mix until smooth.
4. Sift flour, salt and cocoa powder together, and add it to the chocolate mixture.
5. Pour into cups, bake it for 40-50 minutes.
Ganache:
6. Melt butter, add whip cream and chocolate. Mix until smooth. Pour over brownies.
You can enjoy it right away, or if you prefer, you can cool it in the fridge first.
